Beetroot is in season and I’d love to share this favourite cake recipe of mine. At home we usually enjoy a treat on Friday’s afternoons. Friday’s is when we seem to naturally have time to celebrate our week. Another week of trying to do our best and a time to share all our ups and downs with each other. Between the five of us there are always some very funny stories. I used to make this yummy cake during my catering days in London. As you can imagine it often raised some eyebrows as my customers read the label, “Beetroot….Cake!!” they would question with such a gorgeous expression attached to the alarm of beetroot in a cake. I also made this yummy cake for a campdraft out in the Australian bush at Yetman, NSW where it met the same response. In my cafe in Eumundi they just loved it. I could never let them miss the amasing opportunity of experiencing the sensational delicoiusness in their mouths so I gave them a taste test. They all devoured the cake as it really is yummy. The pure joy of watching their body melt and their face beam with delight and surprise as they devoured the enjoyment of beetroot, usually for the first time. Beetroot isn’t the most popular of veggies. Nutritionally I love it. My liver absolutely adores beetroot and from a food styling point of view I think beetroot is stunning. This little recipe has been around the tracks with me, I hope you love it and the delight your friends get when they eat it with you.
8 oz butter, soft
8 oz brown sugar
4 eggs, separated
Half a lemon, juiced
10 oz self raising flour
1 tsp baking powder
4 oz mixed nuts, chopped
8 oz beetroot, cooked + grated
Cream butter and sugar until pale and fluffy.
Beat in egg yolks and lemon juice.
Fold in self raising flour, baking powder and chopped nuts.
Whisk egg whites until stiff.
Fold egg whites and grated beetroot into cake mixture.
Put into a well greased 8” cake tin.
Bake for an hour and a half at 350 degrees.
Cool slightly before turning out.
Cream Cheese Icing
For my healthy friends this icing is not healthy, but it is the icing on the cake for this really healthy cake. Treat yourself once in a while to the yumminess of treats, you so deserve it.
3 oz butter
3 oz cream cheese
6 oz icing sugar
1/2 tsp vanilla essence
Beat butter, sugar, vanilla essence and cream cheese together until smooth.
I know as a nutritionist I so should not be posting an icing full of sugar! But you know I’m all about balance and enjoying life to the fullest. So mindfully devour the yummiest of this cake as an occasional treat.
