Kale, Basil and Nori Pesto

Kale, basil and nori are incredibly healthy foods.  They may help lower cholesterol, detoxify and improve digestion. Kale is a rich source of vitamin A, C and K, manganese, fibre and copper.  Kale is a member of the Brassica family.  Some say kale has more antioxidants than other veggies.  Nori is a dried sea vegetable in paper-like sheets.  You can eat it as a snack on its own or wrap it around rice.  Of all the sea vegetables, nori, along with wakame, has the highest protein content and is the easiest to digest.  I enjoy garnishing soups with shredded nori.  Basil has many of the same medicinal effects as other members of the mint family.  Basil may help with digestion.

Kale, Basil and Nori Pesto Ingredients

1/4 cup pine nuts

1/2 cups fresh kale leaves, stalks removed

4 garlic cloves

1/2 cups nori sheets, shredded

3/4 cup parmesan, grated

1/2 cups fresh basil leaves

5 tablespoons extra virgin olive oil


Put all the ingredients into a food processor and whizz.

With the processor running, gradually add more oil until your desired consistency of pesto is gained.

Mix through wholemeal pasta dishes, brown rice dishes or any savoury dish requiring some nutritional value, flavour or colour.  Alternatively, simply enjoy as a dip with carrots, celery, capsicum nibbles.
