Healthy Italian Dressing For Summer Salads

Healthy dressing will improve the nutritional goodness on your plate and make anything as bland as quinoa taste delicious.  I like to have a few dressings in my kitchen to up style the variety of our weekly meals.  A key focus with online nutrition coaching is to provide time effective nourishing solutions to remove overwhelm.  Drizzling homemade superfood salad dressings over salads and vegetables is a great trick for nourishing your body with real foods.  My clients love this dressing.  I hope you do to.

Health Benefits Of Extra Virgin Olive Oil

Extra virgin olive oil is high in the healthy monounsaturated fat called oleic acid.  I love extra virgin olive oil.  Most noteworthy is that olive oil is rich in a naturally occurring anti-inflammatory substance called oleocanthal.  Oleocanthal has very similar properties to the drug ibuprofen (a common painkiller).  It’s the oleocanthal that gives extra virgin olive oil the sharper taste.  Furthermore, extra virgin olive oil contains large amounts of polyphenols and carotenoids which are healthy antioxidants.

Ingredients

2 cloves garlic, crushed

1 double handful of basil or coriander

100 – 150 ml extra virgin olive oil

1 lemon, juiced

pinch of celtic sea salt and cracked black pepper

Method

Finely chop the herbs.

Mix all the ingredients up in a jam jar.
