Chicken soup with lemongrass and herbs added to the brew is incredibly nourishing for your body if you are suffering from the flu. It’s delicious, light and easy on our digestive system and packed with protein. Take the time to stir in all the good vibes and tweak to your liking depending on your taste preferences.
1 whole chicken – remove as much skin as possible
2 onion – roughly chopped
1 leek – roughly chopped
2 carrots – chopped
1 red capsicum – chopped
10 garlic cloves, crushed or left whole
Miso paste – 2 tablespoon, optional
Parsley – handful – all the stalks can be left on herbs, just remove the roots
Coriander – handful
Thyme – small handful
Sage – small handful
Lemon grass – 2 stalks
Ginger – 1 big knob
Turmeric – 1 big knob or 1 tablespoon powdered
Place all the above ingredients into a saucepan.
Cover with water and bring to the boil.
Simmer for 2 hours.
Remove all the bones of the chicken.
Whizz the soup into blender.
Take some time out to relax and recharge your body.
