Asparagus is a seasonal food here in Australia that I love. Nothing takes me back to English summer evenings more than dipping freshly picked and lightly cooked asparagus into melted butter and freshly cracked black pepper on top. We loved them as a starter. In our garden at home in England, we found growing asparagus tricky. Mum used to say it was something to do with the soil. However, Mum always managed to produce a bumper crop. Wondering out to the kitchen garden on an English summer’s evening after a good day’s work with the horses was something I really enjoyed doing. We would tenderly cut the asparagus with a knife at the base just above the soil. Into the kitchen, we would go, give them a wash and stand them up in a large asparagus steamer with the stalks in the water and the delicate tips receiving just the steam. Nourishing real food created so simply. I hope you love this healthy recipe as much as we did and still do.
2 bunches asparagus, stalky ends snapped off
splash extra virgin olive oil
4 cloves garlic, sliced
1 lemon, rind shredded and juiced
pinch Celtic sea salt and cracked black pepper
First of all preheat oven 180/350 degree.
Place asparagus in baking dish.
Sprinkle over a generous amount of olive oil and toss with garlic and lemon rind.
Bake for 25-30 minutes until asparagus is tender.
Serve with a squeeze of lemon and the shaved parmesan.
Delicious served with Marinated Persian Woombye Fetta Cheese, Roasted Aubergine and Pinenut Salad or a succulent fillet of steak.
