Brown Rice, Spinach and Spring Onion Salad

Brown rice is a fantastic whole grain.  I love using it for most of our meals.  Adding the green leafy vegetables makes this salad a nutritional bomb.  The nutritional value that brown rice offers include; manganese, selenium, phosphorus, magnesium, copper, vitamin B’s.  Also, brown rice is a good source of dietary fiber, carbohydrate and a small amount of protein.  Spinach is packed with phytochemicals and antioxidants.  My ebook Wellness From Your Plate has recipes including spinach sprinkled throughout.

Ingredients

2 large double handfuls of brown rice

2 bunches of spring onions, chopped

1 cup mixed herbs (mint, coriander, and parsley), finely chopped

10 garlic cloves

1 large double handful of baby spinach

1 tablespoon wakame

pinch Celtic sea salt and cracked black pepper

1/4 jar of Herby turmeric dressing

1 tablespoon coconut oil

spinach and spring onion

Method

Firstly, cook the brown rice.

Sauté the spring onions and garlic in a saucepan with a drizzle of coconut oil.

Whizz wakame in the food processor to create a fine breadcrumb consistency.

Mix in the spring onions the herbs, baby spinach, wakame, salt, and pepper.

Remove from the heat.

Finally, blend all the ingredients together.

Serve warm as a side dish or leave to cool and serve as a cold salad.
